Good morning ladies,

If you are like me you are always looking for a tasty and inexpensive meal for your family. Our family is on a very tight budget and it’s hard sometimes to find new recipes that are truly frugal. So many think “frugal” means $2.00 or more per serving. That’s not frugal for me and I’m guessing it’s not for many of you, either. Enter black-eyed Peas and Stuff. This is a tasty and inexpensive dinner and it’s pretty healthy.

You will need

3/4 lb ground beef

4 cups beef broth (use powered bouillon and water)

3 cans black eyes peas, not drained (or six cups homemade with some juice)

3 potatoes, diced

1 onion, chopped

1 celery stalk, chopped

1 carrot, sliced thin

1 teaspoon salt

1/2 teaspoon black pepper

Saute ground beef until cooked through. Drain, return to pot and add remaining ingredients. Bring to a boil. Stir. Reduce heat to low, cover, and simmer for about 1/2 hour or until all ingredients are tender. Serve with hot vinegar sauce. Good with rolls, biscuits or cornbread.
