3 cups milk
3 cups quick cooking oats

3 eggs

3/4 cup vegetable oil

3 cups all-purpose flour

3/4 cup brown sugar

2 tablespons baking powder

1 teaspoon salt
Preheat oven to 425 degrees. Grease muffin cups or line with paper muffin liners.

Combine milk and oats in a bowl; soak for 15 minutes. Beat together egg and oil and then stir into the oatmeal mixture. Mix together flour, sugar, baking powder and salt and add to wet ingredients, just until combined. Spoon batter into muffin tin.

Bake for 20 to 25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Yummy buttered or with jam!
